2 large eggs,
100g caster sugar,
125g butter,
125g self raising flour (sifted),
1 teaspoon vanilla extract or essence.

Switch the oven 180°C.
Put all the ingredients into a bowl and beat until the mixture is white and fluffy.
Spoon mixure into papercases.
Bake for 18-20 minutes or lightgolden brown.
Ice with buttercream and decorate, or lemon drizzle for a refreshing, less sweet option.
